It really depends on the restaurant where I am eating.  If it's a "new to me" location, I'll usually go with cheese enchiladas or beef tacos.  If they can't do that well, I won't be back.

I love most Mexican foods, but it’s hard to beat a legit beef cheek or beef tongue street taco with only cilantro and onion on it.  Some chips/salsa/guacamole on the side with a cold Jarritos soda is always a good way to help them go down.

Enchiladas of any kind, not from SA, not from Austin, not from Houston.  From the TX RGV, it's the best and cheapest MX food in the state and it's better than you can get in the northern half of MX too. F'n fantastic. More of a gravy on top instead of enchilada sauce.

Wife and I love a stuffed avocado.  There are a couple of restaurants locally that split an avocado, stuff it with steak and cheese, batter it and then deep fry it.  They are delicious.

That might work but only insomuch that the restaurant makes tamales and serves them every day if the week.

Also, places that serve tamales one day a week are likely giving you freshly made tamales, while places serving tamales all week might be reheating frozen tamales.

My thinking since I was a kid when eating at a mexican food restaurant was "If Green Chile was on the menu, then it was the only thing on the menu".

Lately though I have grown tired of an endless stream of mediocre Green Chile.

Chile Rellenos has become a target for me, and the elusive Rajas plate which I seldom find.

Alfonso's in Payson has REAL carnitas. Boiled in lard with Coke and Oranges, then fried till crispy.

Love me some pork tamales also.
Local Mexican place has a mojochate with meat and seafood for 2 that is delish.
Also a ranchero pork enchilada dish that is to die for.

Al pastor baked potato. Loaded with butter, crema, cheese, pineapple and pastor pork.
They go through several 50# bags of potatoes a day.

Roasted/skinned poblano, deseeded and membrane removed, stuffed with whatever, dipped in a super light and fluffy batter (almost like a meringue), and flash fried.

Delicious.

Super hard to find a decent one at a restaurant. They always have heavy breading, which totally ruins the dish, but “chicken fried stuffed pepper” is easy to make, and people who don’t know any better will eat it.

My mom found this Campbell's recipe back in the 70's and everyone who ever tried them, loved them.  The secret was chopped cherry peppers.  But, Campbells stopped making the chili beef soup and that is the other key ingredient to those tacos.
