I like the fillet knife.

Also, I just messed with my double guard m16 last night for the first time in a long time and I discovered that I can push on the top guard and close the knife without touching the lock bar.

Zero confidence in it now. It must be why they came out with that secondary lock that prevents the lock bar from moving. Lol

I cheated and bought the already trimmed briskets.
Next time I will trim my own brisket and use a better/different rub.

I've thought about those too. It took around 6 minutes to get the sizzler pan up to temp. and probably about the same time to get it to 120 internal.

@3xpert, Aldi's has Conecuh



the sign at the store was a little ambiguous. It did not clearly state it was a limited time deal. it said new arrival, and Aldi is the midwest exclusive purveyor of Conecuh. As I walked out with 20 pounds the checkout girl said "good sausage, innit" and I said yes, and so much cheaper than having it shipped up and a lot more convenient than chacking the various sketch stores on the west side of MKE.

This is about the tamest of their sausage, but my fam won't eat the spicey stuff and it is a lot for just me to eat, so this works nice.
