They maximized the blade to handle ratio. Personally I like the size of the 111 and the liner lock a bit more, but I can see why the F95 is the best selling model for Shiro. Mine is so perfect I am afraid to use it. I wouldn't think cutting edge length would be an issue for you. You could do worse than picking one up. Collected about 2# before I ran out of time. Retail is around $30-40/# these days. Still plenty out there. I don't ever sell them, but am tempted to take some up to my friend who is the head chef at a 4 star wild game type restaurant. It would be fun to eat there on mushroom credit lol. This is after giving away over half.

Oh, I get that. When I am working with my knives, they get dirty. I don't like it, but it's necessary. I wipe them off when done and move on.
