When I turn on the kitchen faucet it sounds like the pipes are banging inside the wall behind the sink.
I understand the concept of the pipe not being pinned down.
But is there anything else I can do to fix it, beside tearing out the drywall?

It could be a number of things. Typically some  where in the house there is a caped off pipe that extends upward. The purpose is to trap air and act as an hydraulic shock absorber. Over time they become water logged. Turn the water off to the house and drain the pipes. This will recharge the air in the arrester. This is the first thing I would try.
