Bacon potato wedges. I didn't like how these turned out the last time (pan fried) so I deep fried this time. Oh my, lip smacking goodness here. I added rub to flour. Cleaned potato leaving skin on, wrapped in bacon and held together by short sections of toothpicks. Cover wedge with flour/rub and deep fry until done. The flour gives it texture, the rub adds flavor.</h5>  |
Wasn't meant to be a dinner photo, I was taking photos for an interested party from scratch to the finished product when I thought of my Arfbrothers. So, I unholstered my Colt and pulled out my Kershaw to take a photo for your enjoyment. Many of those potato wedges had one complete slice of hickory smoked thick cut bacon wrapped around it.  Thanks for the kind words. I wasn't sure about the flour but adding that texture along with the rub is a winner. |
