I'm going to agree with the guys that say it doesn't look right. Looks medium rare to me

How long did you cook it for OP? I would humbly suggest you cook it longer. Those big white chunks of fat that haven't rendered down yet mean its still raw.

That looks like bacon, not brisket. I don't even have a smoker (slow-cooker brisket, college kid here) and mine has never looked like that.

It wasn't trimmed.
If you buy it in a crying bag it needs to be trimmed.

Buy a trimmed from the butcher or even better buy a clod.

He let it cool and then cut it up, that and it was not trimmed before it was cooked, that is why it looks wierd.  But damn that is a nice smoke ring.

Yes, I just took it out of the fridge, I didn't have any freezer bags on hand.
I don't know the details of the prep or anything. This was from our family reunion. Now, the family down here consists of many, many folks that are not 1st or 2nd cousins. But the food is AWSOME!!!

THANK YOU!!! I got it hot and wrapped in 3 layers of foil, I let it sit for 4 hours and put in fridge. Tonite I cut it up and put in freezer.

yeah that thing looks a little funky.  my guess would be it needs several more hours in the smoker.
