I always smoke a Butt fat side up.   Mustard and rub season all over.

Anyone do fat side down?  Any benefits?  Wondering if the seasoning is harder to penetrate the fat side so I thought trying fat down.

Butt goes on grill in 15 minutes.

I'm far from an expert, but I always do fat side up and it's my understanding that it's the "right" way.

fat bastes the meat as it melts

if it was on the downside, it would just go
into the pit

dont worry about flavor penetration, the smoke
will take care of that

fat side always goes up, fat will render as it "cooks" and drip down over or get pulled through the meat for flavor and moisture.

That right there. You chance some dry meat with fat side down.



usually rub it down with a dry rub the night before (mustard optional....sometimes I do, sometimes not).



Reminds me I need to pick one up soon for next week.

Keep it fat side up.  Let the fat do the work for you.  The seasonging will come through in the end.

I got the recipe from the pickled pig forum so I think I'm all set.  

Do you think I should make pulled pork from the whole thing?

I spray mine with apple juice too.  Put some apple juice in a spray bottle and mist your butt every 45-60min or so.
