I always smoke a Butt fat side up. Mustard and rub season all over.
Anyone do fat side down? Any benefits? Wondering if the seasoning is harder to penetrate the fat side so I thought trying fat down. Butt goes on grill in 15 minutes. Thanks |

You chance some dry meat with fat side down. usually rub it down with a dry rub the night before (mustard optional....sometimes I do, sometimes not). Reminds me I need to pick one up soon for next week. |
