How does one tell if the "All White Meat" is actually chicken?

I've never noticed white meat chicken seeming so...gelatinous.

In the US? It's easy for them to buy chicken. Dog or cat would probably be an expensive delicacy. Also, they'd more likely be red meat.

Be more concerned with how they store the chicken.  I once saw Chinese lunch-type restaurant that had a case of chicken pieces sitting on the sidewalk next to the back door. I don't know how long it sat there.

Any dog/cat/other would be served as a "special favor" to friends.  Chicken is cheap and easy to obtain, as mentioned above.  I frankly doubt the idea of this occurs as anything more than an urban legend, however, as any "specials" could be served at home.  

I know if I went to India to make my fortune I wouldn't be poaching beef brisket.

I too have noticed the "gelatinous" nature of the chicken in the "puffy" breaded stuff like General Tso's and such.

I try not to look, as its not the only delicious thing I eat that does not look the best if examined closely.

You're much more likely to "accidently" eat horse in Florida than to ingest feline in your order of Long Gone Cat from your local buffet. As already said,chicken is so cheap and plentiful that there's no need to do otherwise.

What you see is the poor quality chicken that almost all Chinese places buy.  They don't really prep cook as much as they buy prepared stuff and put it together.  That's why almost all the cheaper Chinese food looks and tastes the same.

Frankly, I'd be far more concerned with the average mom & pop's food handling practices, than I would the possibility of getting something other than chicken.
