So this is the first time I attempted to make chili. I looked online at a few recipes and at the sticky at the top of the cooking forum. So I took everything and found the general same ingredients and started. I am more of the kind of cook that doesn't use measurements but uses taste, smell and looks on how I cook. So with all of that my first attempt at chili....This is going to have some updates and edits for sure. But as I call them Adam Experiments I think it will turn out just fine

So here are the ingredients:

And after 2 hours transfered everything to a crockpot:



Ingredients:
olive oil to brown beef, as much or as little as needed
1.5 lbs of beef serlion cut into 1/2" cubes or 1/4" strips
1.25 lbs of ground beef
12oz of Chorizo sausage beef
1 large red onion
5 cloves of garlic or more
3 jalepeno and 3 serano peppers and 3 random unidentifiable peppers
1 bottle of dark Mexican Beer
1 can of beef stock
2 10 oz cans of Ro-Tel tomatoes and chilies
2 cups of black beans (rinsed & drained)
2 cup of lima beans (rinsed & drained)
4 tbsp of butter

Spices:
6 Tablespoons of ancho chili powder
6 chilli powder
2 tablespoon chipotle paste or sauce
1 tablespoon of ground cumin
1 tablespoon of honey

Directions:
Brown meats, i went with cubed beef, then sausage, then ground beef
cook 1 large red onion until soft but not clear
add 3 tomatos cubed
6 peppers of your choice
crushed garlic times 5
add spices and liquids

from here i just put it all in crockpot and its been sitting for 3 hours now. We will see how it turns out.

Generally Sounds good. Nice large batch.  Some things that are different than what I use, like butter? like not using red kidney beans, but I am a BEANS IN CHILI person, so looks good.  Let us know how it was.  I am a fan of spicy, but looks like you have a good amount of peppers in there.  AAR from the throne!  9/10

well for my first time at chili it turned out damn awesome! I was surprised how everything blended together and it was just hot enough, not too spicy/hot but just how i like it. Many of the other guys liked it at the bbq as well. so all in all not as hard as i thought. cant wait for next time. i started a black bean soup yesterday with left over beans i had, will see how that is tomorrow.

I think it looks really good.  Good job with the ingredients, especially the beer (we usually put 2-3 bottles in our chili but OK).  Rotel is kind of a cheat but that's cool.   My chili is pretty hot so I haven't really gone down the path of the sweet stuff like that honey.  The beans?  Well, they don't belong and everyone knows they don't belong, but if you put a bowl of that chili in front of me I wouldn't push it away.
