This is not a dinner pic but I need to get the hive's opinion on how done this steak is.  I cooked this on the grill, searing both sides at high temp and then cutting the temp down to get the center just right:

I prefer medium rare vs rare for 2 reasons.

1 - I dont like putting cold steak in my mouth

2 -  Rare steaks dont melt the marbling, so while being more tender, they dont have as much flavor as medium rare since the fat has melted into the meat.  Anything over medium rare renders the fat and changes the flavor too much, in a negative way.

That is what I normally shoot for.  Looks like a perfect medium rare to me.

I prefer well done but not burnt.  Don't forget my water with extra lemons and sugar.  Nor the A1.  Then I'll send my steak back after eating 4/5 of it saying it was too burnt and I don't want to pay for it.

M/R is the only way to eat steak.

Unless the lighting is off, that's not a M/R steak.  Slightly overcooked.  Needs moar red.

I was a cook at a steakhouse in my teens. That is a Medium steak.

Rare---cool red center

Med Rare-warm red center

Med-hot pink center

Med-well-almost no pink..no outside char

Well-no pink--slight outside char


It was unfortunate as a cook, to cook the steak properly and have the customer complain because they didn't know what they ordered. GD on Arfcom should have a good grasp on this subject though!!!

Next time vacuum seal it into a ziploc bag and boil it before grilling.
