Since it's raining, I have no choice but to use the skillet instead of the grill. How often must I turn each side and at what intervals? Thanks. ETA: This is a big piece of t-bone. About an inch thick |

This is hard to explain but for some reason this is the third time I've told people this today. Touch the meaty part just below your thumb with the index finger of the same hand. That firmness = rare Now do the same with your middle finger. Medium Now the ring finger. Well done Pinkie= Holy shit don't even give it to the dog. Hope I explained that clearly. |

This is how I cook a steak when the grill is unavailable. This is, IMO, the best method for such sad times as no grill: Allow the steak to reach room temp. Lightly oil the steak with canola. Salt generously with kosher salt. Place a skillet in the oven and bring the temp up to 500 F. Drop the steak in the skillet and leave it in the oven for approx. 2.5 to 3 minutes. Flip the steak an replace in the oven and allow to cook for another 2 to 2.5 minutes. Remove from the pan and rest on the counter. Enjoy. |
