With St. Patrick's in the rear view, it's likely that a few of you had some left over corned beef like I did.



On Sunday morning I made a simple corned beef hash - sorry, no pics. And it was glorious.




Did a small dice on a few potatoes, boiled them until they were not quite done, poured them into a colander to drain and then started with some onions & oil in a cast iron skillet. Added the corned beef after the onions were soft, then a bit of garlic, then the potatoes. Pressed it flat with a spatula, reduced the heat and let it sit for ~7-8 minutes to get a nice crust on the bottom. Flipped it over with a spatula, tossed a dollop of butter on top, pressed it down again and started frying eggs in another pan.




Served in a shallow bowl, a generous portion of the hash topped with an over-medium egg, some fresh ground black pepper and some nice flake finishing salt.

Did the same thing for the first time in my life.  Had heard of corned beef, we made it and it was tasty.  Next day had some left overs.  Day after that, corned beef hash.  This will become more of a regular item.

That's some good stuff.  I did a 4 lb. corned beef yesterday (9 hrs. in the crockpot on low) and have about half of it left.  I doubt it sees the weekend, but if it does I'll make a nice hash.   I am going to check the bin to see if they have more on sale, one of those would be destined for the smoker.

Since we made chili this weekend, it was too hard to resist the scrambled eggs smothered with chili for weekend breakfast, even though I had fresh corned beef on hand.  

OP has inspired me to have corned beef hash for lunch today.  I will structure my schedule around it.    Too bad I can't sling some Gin until after hours.

You are doing it wrong, or your cat hates you.

Fact is, there are no rules for hash.  You can make it any consistency that you desire, and you don't even need to use corned beef.

That is hard for me to wrap my mind around.  I can see it with smoked brisket, the corned beef isn't connecting for me.  I even read it again with one eye closed.  Still

We buy 4 things of corned beef.  3 to eat throughout the week of St. Pat's, 1 for the morning corned beef has, and 1 to stick in the freezer for a future time.

We ended up buying 3 briskets, froze two. I made a big brisket pot roast and ended up with a ton of vegetables left over  - potatoes, cabbage, celery, onions, but no meat.

So I chopped up all the veggies with a slap chop, chopped up some polish sausage, and threw it all together with a couple cups of water, corn starch,  1/2 cup cream, and some seasoning - quick sausage/veggie soup.
