With St. Patrick's in the rear view, it's likely that a few of you had some left over corned beef like I did. On Sunday morning I made a simple corned beef hash - sorry, no pics. And it was glorious. Did a small dice on a few potatoes, boiled them until they were not quite done, poured them into a colander to drain and then started with some onions & oil in a cast iron skillet. Added the corned beef after the onions were soft, then a bit of garlic, then the potatoes. Pressed it flat with a spatula, reduced the heat and let it sit for ~7-8 minutes to get a nice crust on the bottom. Flipped it over with a spatula, tossed a dollop of butter on top, pressed it down again and started frying eggs in another pan. Served in a shallow bowl, a generous portion of the hash topped with an over-medium egg, some fresh ground black pepper and some nice flake finishing salt. |

| That's some good stuff. I did a 4 lb. corned beef yesterday (9 hrs. in the crockpot on low) and have about half of it left. I doubt it sees the weekend, but if it does I'll make a nice hash. I am going to check the bin to see if they have more on sale, one of those would be destined for the smoker. |

Since we made chili this weekend, it was too hard to resist the scrambled eggs smothered with chili for weekend breakfast, even though I had fresh corned beef on hand.
OP has inspired me to have corned beef hash for lunch today. I will structure my schedule around it. ![]()

We ended up buying 3 briskets, froze two. I made a big brisket pot roast and ended up with a ton of vegetables left over - potatoes, cabbage, celery, onions, but no meat.
So I chopped up all the veggies with a slap chop, chopped up some polish sausage, and threw it all together with a couple cups of water, corn starch, 1/2 cup cream, and some seasoning - quick sausage/veggie soup. |
