I'm thinking about dropping 6-packs off the "buy" list and jump to 12-packs just to avoid such a scenario. It' not like the beer is going to go bad if I don't drink it all in one night.

Really up your insurance policy and drop 12 packs for cases.  Too much beer=OK.  Not enough beer=teh suck.

In Michigan the law says alcohol sales stop at 2am. The 7-11 in downtown East Lansing (Michigan State University) has a policy requiring them to lock up the beer coolers at 1:50 am.

You don't know how many time I've seen guys arguing with, threatening, and trying to bribe the clerks to let them buy beer before 2am. No dice. These losers get downright nasty. Like crack whores who know you have a $20 in your pocket these turds just won't give up.

"Failure to plan on your part does not constitute an emergency on my part".

They should have gotten their beer at 2pm instead of rushing to get it at 2am.

I don't know this for certain, but I suspect that the people that will get nasty with a 7 11 clerk over beer sales are not especially adept at long range planning like the type that you suggest.

See you have to plan ahead.  Preparation is everything.  Buy everything you need to reach into Saturday, Sunday and even Monday.  Do not let logistics interfere with a good bender.

Considered that option but space became an issue. Follow me here: I usually grab two 6-packs. Each 6-pack is a different beer just for variety. Now I apply that practice to the new 12-pack policy. Sitting on a case. And if anyone is coming over they almost always bring beer so my local supply doesn't take to much of a hit. Not mention the guys I hang out with follow the Bring-It-Leave-It rule so any beer they brought that isn't consumed is now part of my stock, or vice versa.

Just make sure you get good beer.  Not Natty Light, Michelob Ultra or Papst.  That is piss in a can.  Get Becks, Leinenkugel, Warsteiner or Guinness.
