Place i used to work at had them on the menu. There was one waitress who ate them after every shift. One day she pissed off the guy running pantry and he swapped them out with celery. Under the beer batter you couldnt tell. Only problem was the celery acted like a sponge and soaked up the oil. First bite and she gets covered with fryer oil (not hot, just funny to watch).
Oh yeah, and i had them the first day i worked at the place, they blew dog. But these were spears not slices. |

I Iove Papadeaux's catifsh and connect in Bush International in Houston during flights at luch time. I always make sure I have enough time between flights to eat there. I had deep fried pickles about a month ago in Tullahoma, TN for the first time, not a fav but not bad. |

If done properly they are fantastic. My favorite are the slices done in a light batter. A tempura batter is the best. The best I have had is at the Island Cow on Sanibel Island, Florida. I was there last week with my wife and will be there again in 2 weeks with the kids. If I make them at home, I whip up a chipotle/ranch dressing for dipping. |
