New Mexico style.

Rolled chile rellenos. They are made of ground beef mixed with refried beans and cheddar cheese and green chile. Batter is 10 eggs separated, whites beat and yolks folded in and then flour mixed in until pancake batter consistency.

Dip the rellenos in the batter and deep fry. Make some pinto beans in the pressure cooker on the side. Serve with a tortilla.
