So, we found there's a couple Filipino restaurants near where I work and we want to try it out.  We've had staff members bring big dishes of Pancit to pot-lucks before and it's awesome.  What are some other things to try.  On definite list are....

Crispy pata
lumpia
lechon
sisig

What else to try (with an explanation of what it is too please)?

I don't remember the names of anything but I had a client who catered a lunch for me in his Filipino food truck and it was absolutely delicious.

Grew up there.....food is room temperature.

Pansit is good, as is lumpia.  San Miguel is lousy.

Spent time in PI

Outside of meat on a stick or chicken on top of rice, I found the food to be pretty underwhelming

Sinigang is awesome
Filipino Torta is great

ETA: Mama Sita's BBQ marinade for pork shoulder skewers is killer.

Monkey meat. Don’t know if that’s the real name. My buddies bring back made it all the time and that’s what he called it.

Bicol express is also good with rice. Very hearty and filling after a stressful day.

But if you're going to spend big, at least get crispy pata and lechon kawali.

Mom was from there, some of the food is great comfort food, and most of the recipes are modified a lot.

The ladies can sit around a table for hours eating whole pan fried fish and rice.

The ladies that worked at our house had a good chicken dish.  We helped them get their Bilak Byam boxes through the airport when they went back to PI.

Agreed.  I also let all the ingredients soak for about 30min before turning on the burner, a trick my slant eyed grandma taught me

Totoo naman.

Filipino will tell you adobo is normal every-day food, and want to feed you fancy special dishes, which are also good.

But adobo is heaven on a plate.
