I decided to finally post a solo dinner pic after being on here for several years. I did one a couple years ago with two of my buddies, but it didn't turn out as well as we had hoped. On to the pics!


the wood for smoking. hickory chunks, and apple chips


the concoction i used to inject the meat. charleston pig and peckers sauce, hickory marinade, natty light, and a big ol' syringe


the rub ingredients. cheap yellow mustard and a homemade rub


the piggy all full of marinade, rubbed down, and about to spend a night in the fridge. it is a 4.5lb boston butt from publics.


the hardware. weber grill, kingsford charcoal, weber chimmney


the setup. cheap aluminum bake pan used as a water pan, cast iron smoke box for the apple chips, hickory chunks with the charcoal


and we are off!! 6-7 hours from now i will have some awesome pulled pork.


smoke is rolling pretty well


the side. collard greens cooked with bacon and garlic.


the drink. strawberry shine. before anyone gets all crazy, this is legal taxed white corn liquor that i flavored myself with the sugar extraction method.

I have a similiar set up.

Do away with the Kingsford charcoal though. Get the lump hardwood. Much better and will last longer. You would be surprised at how long you can still use some of the larger lumps. Lowe's has pretty good lump charcoal. Fresh Market is very good as well, if you have one where you live.

I dont normally drink natty light, i use it to marinade food. thats not to say i wont take a few pulls of it as im cooking.

Pleqase expand on the "sugar extraction method"....


its an old moonshiner technique for flavoring shine. take your fruit of choice, and soak it in the booze for a few days/weeks. when it stops pulling flavor out, remove the fruit and cover it in sugar. either add it to your flavored liquor, or fresh liquor and the sugar will pull more juice/flavor out of the fruit. continue this process until you have reached the desired level of flavor/sweetness.
