That situation obviously calls for a swim spa with a large outboard motor installed to get the water moving fast enough for the plane to take off.

They probably do.  Because for floatplanes that are not equipped with wheel kits, its the only way to get them back home after major maintenance away from any body of water big enough to takeoff - and with a crane to lift it off the trailer and into the lake or river.

Maybe.  That is a dangerous move for an inexperienced pilot or one that is rough on the controls.  He added about 10 degrees of flaps that provided just a little more lift, but you'll notice that he had enough speed to climb after flying off the trailer.  The smart part of that maneuver was planning ahead and then waiting until there was enough speed to fly.

I worked at a place that used a trailer with a hold down bar to activate the brakes after the airplane left.  Never knew which direction the trailer would head afterwards.
