Scotch Eggs! This recipe makes 6 Scotch eggs. 6 hard-cooked eggs, well chilled 1 pound breakfast sausage 1/2 cup flour 2 eggs, beaten 3/4 cup fine bread crumbs Vegetable oil for frying Peel eggs and set aside. Divide sausage into 6 portions. Roll each egg in flour and with hands press a portion of the sausage around each egg. Dip sausage-wrapped eggs into beaten eggs and roll in bread crumbs. Heat vegetable oil to 350 degrees Fahrenheit. Cook each egg in oil about 4-5 minutes or until sausage is cooked and browned. Drain on paper toweling. Serve warm. |

Here's a kickass dipping sauce for deep-fried vegetables: Horseradish dipping sauce 1 cup mayonnaise 1 cup sour cream 4 tablespoons Heinz chili sauce 8 tablespoons cream-style horseradish 1 teaspoon paprika 2 tablespoons dried, powdered oregano (see below) cayenne pepper and black pepper to taste Grind the oregano with a mortar/pestle or with an electric coffee grinder until finely powdered, then combine with paprika. Stir together mayonnaise, sour cream, horseradish, and chili sauce. Blend dry ingredients slowly and evenly into wet ingredients (so as to prevent clumps) Add cayenne and black pepper to taste. This is better if you let it sit in the fridge for a couple of hours before using it. |
