Last year I planted a couple grape vine plants.  They didn't do a damn thing all year.  This year, all of a sudden they "woke up", and are growing like crazy.

Do I let them just grow wherever and however they want, or should I prune them?

Depends on what you're going to do with them.  Wine grapes or table grapes?  Trellis?  Fence?

After the grape bundles appear, cut off the suckers, or the vines past the grape clusters. Grapes only form on the 2nd year growth. If you harvest after the first good frost they sweeten up considerably.
