I usually shave once a week, but have thought of letting it go for a while.
One thing though, one side is a little patchy compared to the other on the cheeks.
Since I've never grown it out very long, will it fill in the longer it gets, or am I better off to just shave?

It takes time.

Just let it grow out, it should fill in.

I am on week 3 of my winter beard, and I probably have another two weeks before it fills in sufficiently.  At that point I will trim it up a little bit for work.

How old are you? I couldn't grow anything that even resembled a decent beard until I was about 30. Whatever the case, as the hair gets longer, it usually layers and fills out the empty spots. You just have to hang in there through the patchy weird looking phase.
