Pig's Head is amazing, I've been cooking it for 20 years. Braised the whole head, made head cheese, made sausage, roasted it, etc.
It's amazing stuff. I usually get them for free from folks who raise pigs. They give me the head and I cure some of the meat for them in exchange. If you want to taste something amazing, the roof of the mouth on the pig's head is absolutely spectacular. Gelatinous, slightly funky, tender...everything you want in a bite of pig. |

Anyway, I remember the old folks would tell us kids that the only thing that went to waste on a pig was the oink. Everything else was put to use. |
