Alton Brown did a show on jerky using some air filters picked up from Home Depot and and one of those square room fans.

cut it into thin jerky like strips.
marinate with stuff. put in dehydrator or oven on lowest setting for many hours, until desired "jerkyness" is achieved. take to gun show ??? PROFIT! Find a more detailed recipe here |

I grind it up and buy one of the jerky guns and the mix. Put it in the gun, squeeze it out into a dehydrator. When I make jerkey out of meat that hasnt been ground up, I get the meat on the edge of freezing and slice it paper thin with a filet knife. Marinate it in soy sauce, red pepper, salty etc..then put it in the dehydrator. You can also hang it on tooth picks in your oven at 160 degrees. Put a pan in the bottom to catch the drippings. I grind all my deer up and make nothing but jerky. People in my family that would not touch wild meat will fist fight over jerky.... |
