I grew up with a Jordanian stepfather and like alot of Arabic food. My favorite is Kibbee, but fresh Hummus be Tahini is awesome too.

easy to make ya know

two cans of garbonzo beans (drain out the liquid but DO NOT THROW IT AWAY)
2 tblsp Tahini
1 Lemon
Garlic (none of that pre crushed in a jar crap... FRESH ONLY!)


In a food processor, grind down the garbonzo beans (chick peas) until it is like a lumpy paste. add the crushed garlic... a few cloves are good... I add about 4 ( I like it garlicky!!) add the tahini (some people use peanut butter instead but those people need to have their heads examined) then add about a teaspoon or two of lemon juice.

Mix that in the processor for about 30 seconds... SLOWLY (as the processor is working away) add the reserved water from the can (I usually add in ABOUT 1/2 the amount ... different manufacturers have different amounts of water and the chick peas are sometimes more hard than others)

mix until you have the consistancy you want and eat it up

I love Hummus. The major chain grocery stores charge too damned much, but there's a middle eastern restraunt nearby that'll sell it to you at a fair price. They'll even make it spicy if you ask. For about $11 you get a quart of hummus and a shitload of pita bread.

Their meat & grape leaf dinner is awesome, too!

Actually made it for the first time a few months back...Came out great.

The hardest part was finding tahini in this bum-fuck town.

Sabra hummus is very good, it's a lot thicker than a lot of the stuff in America.

IDF hummus is very very good, so no complaints there.

I made up a batch this weekend . . . I went so overboard on the garlic that my wife wouldn't even come NEAR me for 48 hours after I ate it (the whole batch).

Reminds me of the time one of my friends decided it would be a good idea to eat a whole garlic bulb at a crawfish boil. A few friends went to wally world, and he was so strong we wound up trying to ditch him in the store! You could smell the guy two aisles over! We decided to relent when he appeared to be close to tears, but whenever e boil nw, he gets a good-natured ribbing about it.

I had some once and liked it.

A long time later, I went to a middleastern deli and wanted some but couldn't remember the name, so I described it to the man.  He had a real thick accent, and I thought he was saying "You want HOMOS????  

We got the misunderstanding fixed, but at first my reaction was:

Hummus is fine, but I could use some merguez right now. Those suckers always burned a cold right out of me.

If you enjoy pain, slather the merguez with harissa first.

I love a little halapeno & roasted pepper hummus on toasted rye as a light snack.

My roommate will put a 1/4" thick layer of hummus on a piece of rye and top it off with another (a hummus sandwich) and eat that while trying to figure out what to cook for dinner.

Yeah, its no wonder he's 350+lbs.
