Listen up barbarian.  TexMex is superior to Mexican for the same reasons that American Pizza is better than Italian Pizza.  Immigrants came to this country and found an abundance of meat and cheese.  So they added these wonderful ingredients to their food.  Boring Eggplant Parmesan becomes Veal Parmesan.  Sad little tortilla shells get stuffed with meat, and cheese, and other goodies.
