I have been wanting Mexican type food for a while. Any easy keto variations would be appreciated. I guess I could eat taco filling, but I think the mix is pretty high in carbs.

Ya basically the stuff in a taco on a plate.
Taco Salad if you want to put it on greens. I sometimes do corn tortillas as they are less bad than flour. Mexican food Keto is a good idea. Onions, peppers, tomatoes are a lot of flavor and very little carbs. |

Mission makes keto friendly(ish) tortillas.
We do tacos all the time minus the shells. Meat, cheese, sour cream, salsa, tomatoes, avocado, etc. |

Ole Mexican Foods Xtreme Wellness High Fiber Low Carb Tortilla. Low carb, I use them for everything. Breakfast burritos, tacos, buffalo chicken wraps, deli meat wraps...
also, Quest nacho chips for taco salads. |

Make a thin 6" (or whatever) diameter circle of shredded cheddar cheese on parchment paper and bake in the oven at 350° until it's all melty and starting to brown a little. (Seems like 8 to 11 minutes, IIRC). Take them out and fold them over something to cool - I use long wooden spoons suspended over a large, deep bowl - so they cool and harden into the classic taco shell shape. Fill with your preferred taco fixings. Enjoy.
Adding a little shredded or grated Parmesan to the cheese will help it firm up and toast a little better. I can eat a lot of these. |

The last sprint on keto, I used those tortillas, along with keto bread. I think they messed up my ketosis. I'll try lettuce or cheese crust this time. |

I wouldn't have made it through two years of strict keto without my taco salad.
Just don't use the mix. Start browning 80% ground beef, chop up a jalapeno and cook it in with the meat. Salt, pepper, garlic, cumin, cilantro, and a few red pepper flakes and done. I now prefer that mix over the prepackaged stuff. |

I hodge podged it. Jalapeño, cayenne, banana peppers, scallions from the garden. 3.7 pounds 85 percent beef. 9 Oz bacon. Garlic, soy sauce, fish sauce, worcesteshire, half cup of beef lard. And a quarter head of cabbage. Some spices.
Not pretty, but hopefully calories for the week. And a bit of that kitchen bouquet, whatever the fuck that is. |

Most taco filling are meat and veg. Salsa is vegetables.
Use your preferred one -leaving out papas or nopalitos- and make tacos using romaine lettuce leaves instead of tortillas. |

But I even see this stuff in "carnivore" circles (the ultimate expression of a keto diet?), where they turn food into something resembling a science experiment. To some of them, as long as each ingredient is "animal-based", it's fine. But it's often hyper-processed to a level that makes me wonder if they're not unintentionally creating new problems that otherwise wouldn't exist, if you just ate the genuine article in it's normal form. It starts to remind me more of a religion, than anything else. Just buy normal foods in their whole form(s), and prepare them (process them?!!) like a sane person would. I don't think isolating wheat gluten (which will result in zero net carbs, to be fair) and making that the basis of a "tortilla", is a good idea. Nobody would willingly and freely create this de novo, without an ideology informing it. I actually see this trick used in all sorts of "keto" food-like substances on the shelves, including the "breads" and the "pastas". As a side note, I also think we do Mexican cuisine and culture a huge disservice, when we associate the entirety of thar proud tradition with carb-heavy examples of such (which tend to be Tex-Mex, more than Mex). It's so limiting, when our neighbors to the south have unintentionally created so many "keto-friendly" dishes over the centuries. Carnitas Chiles Rellenos Carne Asada Ceviche Sopa de Albóndigas Pollo Asado Barbacoa Fajitas Chile Verde Cochinita Pibil That's ten right out of the gate, with at least a dozen more left unsaid. Ditch the tortilla when serving, and either go real light on the bread crumbs when they're called for in fried examples...or just eliminate them altogether. And if you're doing a keto thing where you're trying to keep carbs under 50g a day, you may even find that you can incorporate a little of the real thing in there, and meet your goals. TORTILLAS: 340g Water 240g Masa Harina 14g Kosher Salt That's seriously it. And then they were pressed and heated on a dry skillet. The dough ball was divided up into 16 equal pieces with a bench scraper, hence the serving size. I'm not going to call this "keto" (it isn't), but my point is, that if you just make the real thing, and respect the culture that created it to begin with...it's often damned close to being "reasonable" in the carb department. And it actually tastes good. Bonus (bueno?). |

Thank you, that looks amazing. I am down 10 pounds over the past 2 weeks. I do allow one cheat meal a week to keep my sanity. I may just use that to go full blown Mexican. I don't plan on keto for life. I've done it in the past and got addicted to it when the weight was pouring off and I couldn't gain weight no matter how much bacon I ate. BTBH, I get really sick of eating the same shit over and over. These fancy meals look great, but my schedule leaves room for simple stuff, like ground beef frittata or a can of salmon over lettuce. My kryptonite is Italian sandwiches or the braunschweiger sandwich a member here passed on to me. I need to focus a bit more on overall calories and stick with my workouts. Getting old sucks.
