Who has done it without using a smoker and what are your recipes?

Look at the way they do the oven in the recipie down below. That is what I did for my duck jerky from Northern Shovlers I did. If you do use duck though, for the love of God get the pellets out because biting down on steel shot hurts.

You can use a smoker or your oven on a very low setting.
I routinely make it in both. As for a marinade the possibilities are endless. Â I usually use a combination of teriyaki, soy, and a basic BBQ rub. I will smoke it for about 8-10 hours at around 190 degrees. |

Put it between two screens and lay it out in the sun on a dry, warm day. Hang over a smoky fire high enough to not be hot. Larvae is added protein. Low oven method uses lots of electricity. If you're planning on doing more than a few batches, it'll pay for a dehydrator. ETA Just saw OP was in AZ. This is a no brainer. Use first method. |
