Ill Start.....


12 hours 225 degree slow cooked Carolina style Pulled Pork:

I didn't chop it as finely as they do in N. Carolina but I figgered we have all our teeth so it would not matter. (next time!)

Hickory, Apple, and Oak wood used.


Carolina BBQ Sauce: Combination of Cider Vinegar, Red Pepper, a little Brown Sugar, etc..

A little slaw on top.

Serving platters and Sandwitches on Martin's Potato rolls...

I'll post mine as I do it today. Pork Ribs, Beef Ribs, lemon pepper chicken, and chicken basted in a paprika based rub. Slow smoked in hickory and mesquite.

Here's a buncha yardbird and rib brisket on my drum:


Since I wanted to do *all* my cooking out of doors:


All 3 in action, the Weber was an "open grill" for guests to cook whatever they wanted to:

 Didn't BBQ here since it's been raining like a bitch since yesterday morning.  Very rare for us here in CO, we get maybe 2 days like this every summer, and this year it was yesterday and today.
