Versailles is an incredible place.

It's also a good TV series, now available on DVD and probably streaming.
Louis XIV is played by George Blagdon, who also played Athelstan on "Vikings".

I've been to Versailles.  Very impressive place.

There's a public gunrange by the back garden.

So basically not historically accurate food, but they have period costumes.

Yep, sounds like modern “Lego” food served in costume. The langoustine with ginger and red chili is a clue.

Lego food = buzzword ingredients snapped together in a slightly different arrangement.

I’m not sure Alain ducasse is known for “Lego food”.

I don't think anyone wants to eat historically accurate food from the 1600s.

Lots of history fans prolly already know this, but one of the big reasons monarchs back then periodically changed their residence - either went to live at another of their many estates, or relocated to another, different part of their main estate, or forced visits on their many lords (many called it "going on progress", and it of course it also served as a way to tour and show influence) - is because they had to completely clear out the castles and estates to let the help come in and deep clean it. After holding court at one location for a while, it apparently became absolutely fucking filthy, like courtiers peeing and puking in the corners filthy. That wacky shit keeps me reading books about this stuff.

Sure, if you call the limited selection of in season food without seasoning, spices, and refrigeration decent.  Sugar didn't become a commonly available item until the mid-1600s.  Mid-summer to fall would have provided fresh produce but nothing after that.  All meat would need to be consumed immediately or be dried or salted to be kept.

Just once for the experience at less than Michelan 5 star prices and I suspect many people would try it.  Then go eat dinner somewhere else afterwards.

The King of France had all the spices he wanted, as well as all the fresh game he could handle.  Sugar was available in Europe from antiquity...to the rich of course.  As far as produce, of course nothing like the modern luxury of refrigerated intercontinental shopping, but it turns out there are a few greens that can be obtained year round, as well as pickled and cellared vegetables.

Yep! I've been to bunch of those places and a few Michelin Star places, some were good, some were overrated. The ones where they bring you and bunch the plates, one at a time, with one tiny item on them are annoying AF, it's worse when it is really good and you're not getting more.

I want good serve and good food, fuck "the experience." If I wanted "the experience," I would go to a strip club buffet.

Bear in mind that this meal was inspired by Louis XIV, the Sun King, who presided over a great growth of France's power from 1643-1715.

You are thinking of Louis XVI, who reigned from 1774-1792.  Bear in mind that the French (i.e. Louis XVI) did us a solid favor with their naval blockade of Yorktown, VA in 1781.  Made Cornwallis surrender, as he had no hope of rescue.
