Looked through the archives and found a couple but mainly salsa recipes .I use tabasco right now on most things but it feels one dimensional and too vinegary.  

I have about 15 jalapenos and 3 habaneros. What's a good recipe you guys like?

Not enough peppers to make a sauce.



Just make a pot of chili with them.

Smoke the jalapenos until they are soft.  De-seed them and the habaneros, add to blender with a couple cloves of garlic and some white onion.  With blender running, slowly add water until the peppers, onion and garlic form a loose paste.  Add salt and ground black pepper.  Add just enough white vinegar to reach the sauce consistency you prefer.  Bottle and let sit for 2 weeks to a month.  Enjoy.

Now that already sounds tasty. Thanks.

Going to try and grow some peppers next year but wanted to hone the sauce recipe first.

I would really like to start making my own hot sauce as well. My problem is i like different hot sauces for different foods. One that i really like lately is Valentina(sp?) and its stupid cheap.

Tag. See if anyone made their own proper hot sauce.

Tabasco Sauce ferments for years.

Not sure about other styles, like Louisiana Hot Sauce or whatnot, but I assume they all have some aging time involved.

when you get them pasted, you can put it in a very fine cheese cloth and smoke it. I have smoked salsa buy burning smoke dried peppers.

You dont have enough peppers for that, but you can smoke a sauce.

Puree peppers and add water or beer or cider until you can pour it. Add one tablespoon of salt per quart. Ferment under an airlock for at least 6 months. You can spice it up before or after fermenting or both, I prefer after as flavors don't ferment out. Use as is or can it up for long term storage. I'm still eating on the batch I made 3 years ago.

I'm a hot sauce freak and this is the best, tasting, not hottest, I ever enjoyed. A friend, George, makes some up every year after pepper harvest and gives bottles out at Christmas.
Oh, it's hot but oh so delicious.

George’s Hot Sauce

Liquid part is 80% vinegar
20% is Saki and fresh Navel Orange Juice


Habaneras, mostly orange
Fresh Tomatoes
Vidalia Onions
Honey
Fresh Cilantro
Fresh Garlic

Put all the stuff in a blender/juicer

My favorite has become something called Sambal Oelek.  Similar to Siriacha, but thicker and less vinegary.

Grow my own peppers and make hot sauce every year.
