I have some chairs around my dining room table that have natural leather seats. I wanted to change the color to a darker brown.

My question is...how can this be done, yet leave no residue behind on the ass of my pants? Wont oils and stain rub off?

What should I use? My goal is a tobacco color or slightly lighter.

Go to a leather/shoe shop and get the dye. The over the counter stuff will not really stain, and will rub off. It costs more, but use the professional grade or you will be sorry.

Dying leather so as to prevent dye bleeding takes a little practice, but the results can be worth it.
Most garment leather is final-finished with a clear, glossy/semi-glossy finish to prevent the leather from being accidentally stained, and to inhibit dye bleeding and migration.
Remember the shiny, slippery feel of new, finished leather?  That slippery shine is the final finish.
Check out this site: www.tandyleather.com.  Look for a product called Super-Sheen or something with a similar name.
Don't forget that you have to de-gloss the leather.  That is, remove any traces of the old final finish before you apply new dye, else the leather will be splotchy. Buy some de-glosser also, and PRACTICE FIRST.  You might find that re-upholstering w/NEW leather could be the best long-term answer.  Good luck!
