Anyone have a good recipe?  I like dill and spicy.  I've done the pickled beet juice thing before and that was disgusting.

We were given 12 dozen eggs.  No way we will eat them all before they go bad, so I'd like to pickle a large portion of them.

The last time there was a thread like this, I got on the train and made three quart jars of pickled eggs, three recipes.  I probably ate one egg out of each jar and trashed the rest.

Good luck OP.

For that many eggs you are going to need to "can" the eggs as well as pickle them, unless you eat them fast.

Here's a recipe that looks about like what I've used in the past:
Canning pickled eggs

I do my quail eggs with a jar of the Tabasco peppers, and mustard seed, 1 jar of most Tabasco peppers will do 3 8 ouce ball jars of eggs.

Why the need for canning? Won't pickled eggs last for.....ever? Well, won't they last for a year or so?

I like pickled eggs and have made them before.  I wasn't all that crazy about the ones I made, but I've eaten some really good ones in the past.

I remember the last pickled egg thread. I though it would be good to try too.

I didn't make any though, bought one store bought jar to try.

Only way I could eat them was turn it into egg salad by adding tons of mayo and mustard, even then it wasn't good

No idea they never last long enough to worry about it. I'm pretty sure pickled eggs are safe to eat for at least a few months.

I love all things pickled but eggs are not one of them. The problem with them for me is the texture they take on after being pickled.

I tried this recipe from Alton Brown's cook book. Couldn't find it online so I hope the pics turn out.

Buy large jug of pickles, eat or throw pickles away. Add boiled eggs. Wait about 4 months, and enjoy.

I've made some as simple as juice from a can of beets, water, white vinegar, and sugar. start tasking OK after a week.
I need to make some spicy ones though. I need some recipes.

Not outside of a refrigerator, and OP is talking about 144 eggs -about a dozen quart jars.
