When the brisket has an excellent bark and is well rendered it is typically extremely rich. I like a little bit of tomato based bbq sauce to dip into to cut the richness of the bark and bring out the flavor of the meat. I don't like my meat cooked with sauce or sauce poured on top (unless it is a pulled pork sandwich)
