Which should I get? The Dot or Echo? And yes I know they will be listening to me but we all have smartphones in our home so someone's already been listening.

Dot is an echo minus the fancy speaker. If you have Bluetooth speakers, or a nice set that will connect with a 3.5mm jack just get the dot. Or if you don't want to sink a bunch of money, get the dot. I got the dot and for the price it's great. Wasn't willing to pay for the echo just to see if I liked it.

My mom got me an Echo for Christmas and I honestly have no clue what to do with it.

I'm likely missing something, but I just don't have that many questions I need a robot answering on a regular basis, nor is my home a "smart" home where I can use it to control anything. 

What's the upside to these things other than having a robot spy in my living room?

I got a dot on sale to see if I liked it. You can get an echo later if you like it, or sve yourself 130$ and just buy a decent bluetooth speaker for it.

I just set up two dots today.  I didn't go with the large echo because I blue tooth the dot into my stereo receiver.  I love it

What do you want to do with it?  Do you want to control stuff or listen to music?

Control, get dots.  Music, get echo.  

I was a day one adopter of the echo and I used to listen to a lot of music on it "Alexa, play some Pink Floyd."  But I started putting HEOS speakers all through the house for whole house audio and now Im spoiled by the HEOS sound and never listen to tunes on the Echo.  Q1 2017, I'll be able to push Alexa output to my HEOS speakers!  

Ive just been adding dots in just about every room for control purposes (IFTTT, Samsung SmartThings, Harmony Hub, etc.)
