I have a park set up now. As the level goes down from evaporation, do I refill with mix or plain water?

Distilled water only. The minerals in plan water will screw it up.

Hint: Mark the level when you first fill it up so you know how much distilled water to add.

Like sslocal said, use distilled water. As the park appears lighter, add the concentrate and a bit of 0000 steel wool to add the darker cast to it.
