I need to make linguini and sheet pasta for lasagna/ravioli. What hardware and attachments are recommended? A crank operated machine should be sufficient for now. I see many choices on Amazon dot com and don't know where to start.
I am going to buy a Spaetzle press too.............. thx (feel free to move to food section after answered, posted here for traffic) |

i use my kitchen aid attacment- its kinda a pita to get the dough right, but damn you cant beat fresh pasta. I know some people want to go "old school" (i hate that term) and get the hand crank- but at least look for one that you can add a motor to....just saying....
check amazon for best prices. PS i use a pototao ricer for spatzle- mixed results. |

Yup, the potato ricer is what I plan on getting, stainless if I can find one. |

For those who may be interested:
I found a Kitchenaid roller and linguini cutter for $69 and $17 shipping from Amazon. This is two separate attachments and already arrived, but haven't had time to try it due to the holiday. Bed Bath and Beyond had a Spaetzle (potato ricer) from Oxo for about $17 and a 20% off coupon. It works very well. I walked around a few big box stores after ordering on line, and none of them stocked the Kitchenaid attachments. Edit to add review: Yup getting the pasta mix correct has a steep learning curve. Don't use a washcloth to clean the roller when it is running. The directions even tell you this. It will probably go through the roller OK once. The second time will cause an 8mm brass hex key, that protects the gearbox, to shear............ ![]()
Kitchenaid does not sell parts for this, however, they have an excellent warranty and are sending me a complete unit, no questions asked. At the end of the phone conversation, the operator told me not to clean it with a wash cloth.
