They look great. I have 2 racks seasoned and will be smoking them tomorrow. I usually cook them right after rubbing them but wanted to try leaving them over night once to see if it makes a difference. If your rub contains a bunch of salt, they will taste hammy. Salt will start to try to cure meat if left on there overnight. As long as it's not loaded with salt, youll be fine. I always rub right before I go on. Let me know how yours turn out. |

The ribs and a whole chicken are on the lower rack. Pork belly that was cured for a week becoming bacon and some jalapeno cheese sausage on the top rack:http://i103.photobucket.com/albums/m133/orion2527/81ba1a47aa2784e4f0b9c7ca4e4b4984_zpsyfeu3v7h.jpg Sausage sounds good. Looks good too! |

Looks awesome! I made ribs yesterday and I think the charcoal is a PITA. I like the idea of charcoal for grilling and smoking but in the end, the mess and inconvenience always seem to make it more trouble than it's worth. Blasphemy, Hank Hill. Get a decent smoker and grow a set. It's not hard to clean up a little leftover ash. |

I ate two sandwiches before I remembered that I wanted to share the pics. Tried some Franklin's bbq sauce on it. It was awesome. http://i18.photobucket.com/albums/b127/FP2000H/image_zps0cbh132k.jpg Looks great! |

We did ribs today. Although I didn't have enough charcoal so I put them in the oven at 275 for 3 hr and finished on the grill with burgers. Not bad. May do again in the winter. The oven heated up the house too much today. I hear there's a way to have ribs with flavor, and not heat your house up |

Despite that, the man is correct. Especially if he wants to cook brisket or pulled pork. 12+ hours of tending coals is for suckers. Electric smoker master race FTW. |

Been there, done that. No way in hell they compare. I've had several and I have several friends with them. No fucking comparison. Not even close. The only people who think there is, dont have a clue. Sorry. Edible food? Yes, the food is ok but nowhere near like a wood fired smoker. |

Because the BTUs given off with wood are totally different than the electrical BTUs, and there is absolutely no way to duplicate that, EVAR.
