Hello All

Anyone got any salsa recipes to share?

I just blended 3 medium tomatoes, one large white onion, one red bell pepper, one green bell pepper, three jalepeno peppers, and some celantro. It came out OK but tastes as if it is missing something.

doesn't have to be but it has a better taste in my opinion.

You're missing Garlic and Lime juice. I also add a couple of spoonsful of vinegar, garlic powder, onion powder and a few other things.

ETA: try cerrano peppers, tomatillos, and i usually dice of a cucumber and add to the mix also.

4 tbsp vegetable oil
2 tbsp lime juice
4 lbs roma toms
1 large white or yellow onion
4 jalapenos (with or without seeds depending on how hot you like it)
half bunch of cilantro

Salt to taste

Add some chips.

6 Roma tomatoes, chopped
4 garlic cloves, minced
2 seeded and minced jalapenos, plus 2 roasted, skinned and chopped jalapenos
1 red bell pepper, fine dice
1/2 red onion, fine chopped
2 dry ancho chiles, seeded, cut into short strips and snipped into pieces
1 tablespoon olive oil
1 lime, juiced
Chili powder, salt, and pepper, to taste
Fresh scallions, cilantro or parsley, to taste

Salt with iodine will discolor some  fruits or vegetables when you are canning that's why you should use kosher salt.

Kosher salt comes in flakes, not crystals, and adheres better to food. Crystals tend to flow like sand and clump at the bottom.
