I've never had great luck with that compared to butter.

Doesn't taste as good either, make them too bacony.

I’m sorry, my screen must be malfunctioning. It says “too bacony,” which is a heresy of the highest order. Nobody in their sane mind would say such a thing.


Unlike most of GD, I prefer more than one flavor in my cooking.

Fired in bacon grease, some cracked black pepper and finely diced habanero.  Been eating that way since I was a kid and not tired of it yet.

I pretty much like eggs any traditional way .

As somebody pointed out take the time to find someone local with hens and get your eggs from them , just that much better.

Eggs scrambled with cottage cheese or cream/milk is good but as you are whipping them up also splash a couple of spoonfulls of water in there also . I think the water changeing to steam while cooking makes the texture lighter and more fluffy

Sunny side up with salt and pepper, or scrambled with salt and creme fraiche, and pepper after plated. Sometimes Checheres, sometimes hot sauce, sometimes salsa, sometimes just the salt and pepper.

Eggs goldenrod. Old mountain folk recipe. Boil several eggs and then remove the yolks from the whites, and set aside. Fry some bacon, tear into bite size pieces and set aside. Make peppered gravy (package or home made) and then tear the whites into thumb size pieces and drop into the gravy. Stir.  Scoop gravy onto toast and top with the torn pieces of bacon and crumble the boiled egg yolks as the final topping.

ETA: some people top with a dash of smoked paprika or old bay, but a dash of salt and pepper will suffice as well.

It’s basically garlic powder, onion powder, salt and pepper.

Eggs I prefer over easy or fluffy scrambled.  Migas if I’ve got the ingredients already.

Eggs are manna from heaven.

I still remember as a kid going through a ritual at Boy Scout camp where they gave you a raw egg, a match, a box of raisins, and a square of bitter chocolate after not eating for a day or two and working hard labor for a day or two.

It was pouring down rain and all the other boys were looking pretty sad as they watched their futile attempts at fire fail again and again.

I used the match to poke two holes in the egg shell and I slurped it down like the best smoothie ever made.

If an egg yolk is solid enough to "crumble", you've turned it into a nasty ball of sulfurous powder.

Pull up on the yoke about 60-90 seconds earlier and give them a try.

Since I started working from home thanks to the WuFlu, I switched from eating breakfast on the way to work and then lunch to just making myself a nice brunch around 10:30-11am most days.

Heat my Griswold #9 on the main burner on medium heat, 8” Butter Pat on secondary burner on medium low. Add a tablespoon of butter to the Griswold when it’s heated, and then fry 2-3 strips of good bacon (cut in half for shorter pieces). Once bacon is done transfer to paper towels to degrease, then pour ~1/2 of the grease into the other pan. Add another tablespoon of butter, and cook two Kodiak Cakes Power Waffles (Eggos work too) in the butter/bacon grease combo. Simultaneously in the other pan, fry 2-3 eggs in the transferred bacon grease, over easy, salt and pepper. Waffles and eggs finish about the same time, throw a small amount of my mom’s homemade maple syrup on the waffles.

I don’t think I’ll ever get sick of this combo. And cooking waffles this way is a game changer, they’re the most savory/sweet combo of flavors I’ve ever had.

The solution is to fry bacon in butter, then use that to fry your eggs. Best of both worlds.

I've been frying mine up in beef tallow lately.  It has an interesting taste and really good when I fry some breakfast taters up.
