My information is a bit dated, but you basically attend ROTC classes while working on your degree, prior service exempts you from the first two years of ROTC classes (if you want, I knew prior service cadets who went ahead and took the classes).  Classes will cover subjects like military history, squad/platoon/company tactics, map reading/land navigation, military justice, ethics, etc...  The quality and frequency of field exercises will vary depending on the school.  The goal in ROTC is to rank highly on the OML, the order of merit list, which is a national ranking of all ROTC cadets prior to commissioning, the three main areas are academic GPA, advanced/summer camp score, and instructor evaluations.  Ranking on the OML can determine whether you get your choice of branch and whether you go on active duty or go Guard/Reserves.

What service are you interested in?  I'm an AFROTC Det/CC and can answer any questions you have.

Big question––do you already have your bachelors?  I'm pretty sure all the ROTC programs are designed for someone getting their undergrad; if you're working on your master's, OTS is the more appropriate route.
