That's a good sign it's a cult classic with a popular fan base.

There's a bunch of YouTube vids with backstory, what happened to the vehicles, etc.

Best Kawasaki commercial ever...



So Kawasaki and a dealer in AU agreed to lend them motorcycles for the filing the movie. The prop guy didn't get the message that bikes had to be returned in original condition.  So they painted them, added farings, and modified them for Tow Cutters gang.

Kawasaki was not happy when they got the bikes back...

Cinematographer David Eggby, filmed a lot of the high speed motorcycle scenes riding on the back of Goose’s Kwaka. Sometimes traveling over 100MPH all without a helmet.
Terry Gibson, President of the Vigilantes MC doubled as Jim “Goose” Rains.

Balls of steel !!

It's been 35 years and I'm not exactly sure what you are saying, but my memory was of seeing two cops in a two tone yellow and blue (maybe black) Car with Pursuit written on the back. There's a chase and a crash and the rookie cop is holding his throat. The senior cop who was driving gets on the radio and says something to the effect of send the meat wagon. At some point you see Max in a black car that has Interceptor written on the back of it. He.'a by himself and it's clear his car offers more performance.

Later in the movie, they are trying to get Max to stay on the force. There's a couple of mechanics who sound a little goofy and off in the head. They tell Max they fitted his car with the last of the V8's.

That's what I remember from watching the movie in the 80's. Is that wrong or is there some movie lore you are referring to?

I think you are possibly mixing up scenes.  The initial scene is part of what you describe, 2 pursuit cars chasing The Night Rider in a stolen V8 pursuit special Holden Moldenaro

Max is seen sitting in his interceptor but it is yellow  and blue like the pursuit cars.  The black car isn’t until his wife and child are murdered.  The back of the car is dark blue that’s probably what you are remembering as black

Yes.  I had to go back and look.  I definitely remember PURSUIT on the back of the meatwagon caller and crushed throat rookie's car or other and INTERCEPTOR on Max's car.  Max's car had a good deep rumble in the build up before he joins the chase.  What I didn't remember is that Max's car also had a three tone paint job.  The scene from the back with INTERCEPTOR told me dis gonna be good.
