I will be moving across country from GA to WA soon. What is the best way to move my guns? They will be in the car with me, but should I keep them assembled or disassembled? All have lockable cases and trigger locks.

IMO, the best way would be for the firearms to be locked in their cases and locked in the trunk. Ammo stored seperate of course.
Also follow all traffic laws and you probably won't have to worry.

Check on packing.org. Some states do not allow possession of a pistol even when traveling through. Fortunately it looks like you are smart enough to be moving FARTHER away from New York State.

Put them in the trunk and go. As long as the "item(s)" are legal at point-A and Point-B, go on your way. As to travel through restriced areas, you are protected by the McClure-Vollmer Act, covers lawful transsport between 2 legal destinations.
