I know it seems kind of silly, a grown ass man asking other grown men how to build a tree house.  But, here goes.

What's the best way to attach the darn thing to a tree?  Trees move/grow and I want something that's going to last.  It's going to be a hybrid structure that I'd like the kids to get many years of use from.  The boys are not-quite-1 and not-quite-3.  When it's finished, the underside of the floor of the house will act as the hanging points for swings/bars/rings, etc.  I have a good idea how the structure will be built as framing I've done in the past, just not sure how to keep it in the air.

Any advice or build experiences would be greatly appreciated.

There's a show on TV called tree house masters and they use a piece of round steel about 4 inches long and 3 inches in Dia. as a bearing point. They attach this round piece to the tree with a long lag bolt and then build on top of that which lets the tree house move independently from the tress.

Those things are some serious hardware.  I looked around and those guys actually have an online store where you can purchase what you're talking about (called TABs - Treehouse Attachment Bolts) and they run about $95.  That would quickly exceed my wood budget.  My buddy is a fabricator and I recently hooked him up with a whole heap of scrap steel I had laying around.  I'm thinking of seeing if he can make me a few of these:
