That's why I get two small ones instead of one big one. Four drumsticks/thighs/wings. Young, tender. Two 9 pounders, this year.

Yes. I said I like dark, juicy meat in a BP thread.

I slather mine in butter and all the spices I like. Sage, thyme, rosemary, little oregano, garlic powder, onion powder, S&P.

Bake in a bag in the roaster, breast side down. It doesn't get pretty golden brown, but when you carve it, you're pulling all that skin off anyway. The white meat stays almost as moist as the dark.

And don't over cook the damn thing. Bring to 160. Let it rest and rise on up to 165. Perfect. All the times given I've found are way too long.

I like gravy, too.

But, my turkey day gravy is not the usual brown, turkey drippings gravy.

I do use the drippings, but I add some chicken stock (usually necessary just for volume) and make the dumplings on the box of Bisquick. The flour makes the roux and turns into dumplings and gravy. Add a can of cream of chicken.

It's been standard fare for me at grandma's house every TG since I was born. Turkey, dressing and dumplings/gravy.

My mouth is watering just thinking about it.
