you pull the big fat glob and skin off the top before using it
there was no fat or other nasty stuff in the resulting meat yesterday that I could see

the price is definitely a negative, but my coworker shredded three butts in no time

Seen it before and I sure wouldn't want to eat any of that bbq.  I pull a good deal of fat, gristle, and god knows what else out of my pork when I'm shredding it.  I hate that it takes 15 minutes to pick apart a 10 pound butt but I would be ashamed to serve meat full of nasty bits.

That has always been a "hands on" task for me. Plus 1 for the forks, especially if they are wide salad forks.
