For years, I was a beer can chicken advocate.  And for sure, it really does make a great chicken.  But, I think I have found my new favorite, roasting in an enameled dutch oven.

I have been using electric turkey roaster for a few years with outstanding results, and I figured roasting the chicken I side a metal pot with a lid would have a similar effect, and it does!

Most online recipes call for a half hour to 45 minutes of roasting covered, and then taking the cover off to bring it to the final temperature.  I stuffed the cavity with a quartered onion and a couple of split garlic cloves.  Rubbed the bird down with olive oil and gave is a good dusting of poultry seasoning, fresh ground black pepper, and some Tony Chachere's.  I put more olive oil in the bottom of the pot along with whole baby red potatoes, carrots and chopped celery.  It's a little 6qt dutch oven and the chicken just barely fit, but it turned out great.  Fall off the bone moist and tender with good flavor from the seasoning and the vegetables.  

Yes, I know its worthless without pics, but it smelled so good and we were so ready to eat, I was already halfway through carving it up before I thought about taking a picture.

Anyhow, what's your favorite method for roasting a chicken?  What other methods have you tried, and why did you choose your method over them?

Rotisserie on the grill.

400 indirect.

Spray w olive oil and crank up to 500 for the last 15-20 minutes to crisp.

Whoever double-crosses me and leaves me alive, he understands nothing about Tuco. Nothing!

Bag o' chicken

Spray the inside of bag and outside of chicken with cooking spray.  Put garlic cloves, quartered lemon and fresh rosemary inside chicken then put chicken in bag.  Sprinkle monkey dust over chicken.  Fold over top of bag and clip shut with three binder clips. Roast until done, tear away bag, brown skin, serve.

This. I did the beer can or spatchcock for years and although good, I can’t make one any better than a yardbird from Costco.

The OP’s method sounds good though so probably need to give that a run…..

 Would agree, and I enjoy doing them, but those freaking Costco hormone fed chickens at 5 bucks are tasty and hard to beat.

Fixed.  My Costco is a decent hike away so I get one for right now and two for the chest freezer.

this thread is timely, I'm going to oven-roast a chicken today and was just deciding how I want to do this one.

1. rounded enamel pan sitting on veggies
2. square metal pan raised on cooling rack
3. Cookie sheet raised on cooling rack

Leaning towards method #2.

I obtain a chicken, I give it to the wife and she does some sort of magic with a ceramic pot in the oven.  

I'm usually in charge of the vegetable slicer.
