Could I just sit in front of a video camera and state my intentions? Would that be legal?

Good grief.  If you have enough stuff that it matters who gets it, spend $200 or so on a lawyer so it will be recognized in a probate court.  Seriously.

Apparently he will have his choice of a soup cup, a tie, or an apartment full of coca cola.  Try not to die first, eh?

You need to consult with an attorney that specializes in this area.  It (the video) may be a legal and binding document, but something on paper would be better.   It may cost a few hundred,  but if something were to happen to you and/or your wife, you won't be leaving a mess for your children and family to sort out or have to fight the state or court system to get what you would want them to have.  That could and probably would cost them thousands in attorney fees.
