With Thais I do, and say the appropriate greeting.

They are an ally, after all.

The bow is called a Wai.

Additionally, don't be surprised if a fresh off the boat Thai waiter or waitress asks you somewhat probing questions, especially if you seem knowlegable of Thai food or culture.  They are simply being polite.  You can answer generally, but really they are very curious.
