ETA: for the record, it may seem manly to eat burger meat bloody, but it's really just an invitation for infection. There isn't any bacterial contamination to speak of on the inside of a steak because it hasn't been exposed to surfaces and air. When it is cooked even to the bloodiest rare, the outside (where microbes may be present) is sanitized by heat. In contrast, ground meat has been entirely exposed to bacterial contamination and it is very important that the internal temperature reach at least 155 degrees, F. Not to worry, though. Anyone who isn't a window licking retard can still cook a flavorful, moist burger that is also safe to eat. |
