if you have a plumbing snake ... after you use it  how do you clean it as you retract the snake? lysol spray? bleach water? or just leave shit on the snake?

Not sure there's really a "getting all the shit off of it". Run a cloth over it as you retract it is about as good as it's going to get.

Take it outside, pull the entire length out and hose it off, it's what I do.

Spray it off and then let sun dry  (UV disinfection).  Bleach will accelerate corrosion.  E.coli under optimum conditions can only live up to 7 days outside of a mammalian gut, so a hot sun will disinfect in minutes.

if  i'm using it indoors, that means i have to retract it with all the shit on it, and then bring it outside and pull it out again?

If you were successful at opening the drain, run shitloads of water as you retract the cable. Hair is easier to remove after cable dries. Water will get most of it that is soluble. If a sewer is involved, the water still applies unless grease, tampons or roots are involved.

Seriously though, it's an item that isn't ever going to be really clean after its first use. Hell, the spring bulb at the end usually has a nugget imbedded in it forever.

I wipe as I retract too, but I still hose it off including the inside of the snake housing.

If using indoors, you could coil it up before retracting and then place it in the shower or tub and rinse or take it outdoors and use the garden hose.
